Made entirely from hand selected Sauvignon Blanc, the fruit was harvested in the early hours to preserve aromatics, then gently pressed and cool fermented at 18 to 20 degrees Celsius in stainless steel. The wine rested on lees for eight weeks to build texture and a subtle savoury edge before bottling.
