Product Description:
Supple, scented and finely poised, this is a classically styled Burgundy Pinot Noir. The 2023 Domaine Paul Chavy Bourgogne Rouge is drawn from 100% de-stemmed Pinot Noir, vinified with traditional care in Burgundy, France. The fruit undergoes a long maceration of two to three weeks in stainless steel, followed by 11 months’ maturation in seasoned oak barrels, then a final rest in steel prior to bottling. The result is a light-to-medium-bodied red with delicate structure, vibrant red fruit and fine-grained tannins. Unadorned by new oak, it remains faithful to both variety and origin, expressing Pinot Noir’s inherent elegance with quiet clarity.

Domaine Paul Chavy is based in Puligny-Montrachet and is better known for its white wines, yet brings the same restrained touch to its reds. The fruit for this Bourgogne Rouge is selected with precision, gently handled throughout fermentation and ageing to retain fragrance and finesse. Oak barrels used range from one to five years old, imparting texture without intrusion. Blending occurs after élevage to ensure balance and consistency, with minimal intervention across the process. The wine is intended for early to medium-term drinking, offering purity of fruit and immediate charm over extracted power.

The 2023 vintage is notable for its suppleness and approachability. With soft tannins, lifted aromatics and minimal oak, it delivers a graceful expression of regional Pinot Noir, suitable as a companion to roast duck, herb-crusted poultry or mild, creamy cheeses.
