One of Houraisen's flagship sake's, Houraisen Bi Junmai Daiginjo is an elegant style of Junmai Daiginjo. To provide a more mellow and rounder character, it was tank matured for 10 months at 10 degrees. The aromas on the nose display sweet fruits. A good balanced balanced showing gentle acidity and sweet fruit flavours.
Pair this sake with Sashimi, fish carpaccio, vegetable tempura or miso and yuzu flavoured dishes.
