Il Divin Codino Baggio 2021

The 2021 Il Divin Codino is a blend of Cinsault, Grenache and Mataro from McLaren Vale. This wine was made up from specially selected parcels of hand-picked grapes from various parts of beautiful McLaren Vale. The cinsault was cultivated in the warmer southern plains of Whites Valley down towards the base of Willunga Hill, while the Grenache and Mataro were sourced from the cooler, north eastern hills of Blewitt Springs in the McLaren Vale appellation.

All three batches were hand harvested on the 7th of April and then crushed and co-fermented at a moderate temperature in a stainless-steel rotary fermenter where they remained for five days on skins before being pressed off to stainless steel tank. The resulting wine pulses in the glass with a lovely ruby crimson hue and a classic mix of McLaren Vale aromatics; dark and red berry freshness as well as the varietal contribution of floral and delicate spice fragrance from the cinsault. The Blewitt Springs Grenache shines through with rich but sophisticated berry weight and flavour right throughout the palate. The Mataro also plays its role by providing a typical savoury profile and lingering but fine grape tannin to carry the wine through to the back palate.

The wine is delicate, yet complex, lift but still layered. It is has been made to be enjoyed with both savoury and sweet foods and everything in between, particularly anything from carpaccio with capers, to kiwi fruit with cream.
