Assyrtiko is an exceptional white grape variety that thrives in hot and arid climatic conditions, maintaining a remarkable balance between high alcohol content and crisp acidity. Characterized by its emphasis on texture, extract, body and structure, Assyrtiko stands out as a varietal that highlights these qualities rather than relying solely on its aromatic profile. Originating from Santorini, Assyrtiko is responsible for producing the renowned PDO Santorini (ΠΟΠ Σαντορίνη) whites, which are known for their lean, mineral-driven and highly concentrated character. While primarily associated with Santorini, Assyrtiko has successfully been cultivated in various Greek wine regions, spanning from the Aegean Islands to Macedonia, Central Greece and even down to the Peloponnese. Outside of Santorini, Assyrtiko maintains its characteristic crispness and mineral expressions while also revealing a higher level of primary fruit aromas and a lighter, less dense structure.

With a light straw-yellow colour and an elusive nose of dried flowers, pepper and citrus blossom, the wine is light and crisp, dry and soft at the same moment, with good intensity and persistence. There’s a touch of finesse to it, helped along by the moderate (for assyrtiko) alcohol.
