The Sullivans Cove French Oak Second Fill TD0423 was distilled in September of 2013 and decanted in September of 2024 maturing at 11 years in a single 300L French oak ex-tawny cask previously filled with an older batch of Sullivans Cove Single Malt Whisky. Bottled unflocked and unfiltered at 47.5% ABV, this cask yielded just 402 bottles.

TheFrench Oak Second-Fill casks have a history as rich as their flavour. Initially serving as first-fill ex-Tawny casks for an earlier batch of Sullivans Cove single malt, the best casks are then selected for a second round of maturation. This maturation style beautifully displays the rich character of the French oak, while allowing the distinctive spirit character of Sullivans Cove to take centre stage.

Founded in 1994 in Hobart, Tasmania, Sullivans Cove Distillery has established itself as a pioneer in the world of single malt whisky. With a focus on creating the finest expressions of Tasmanian whisky, Sullivans Cove has garnered global recognition, including being named World’s Best Whisky three times in 2014, 2018, and 2019. The distillery's success lies in its dedication to small-batch production, using only 100% Tasmanian ingredients and traditional distilling methods.

Tasting Notes

  • Nose

    Warm and full, with fruit leading the way - dried apricot, pineapple, apple juice, and damson plum. Plum blossom and baby powder add softness, balanced by thick full cream. Porcini and truffle bring gamey depth that we often see in Sullivans Cove spirit, alongside hints of old cigar box and wormwood. Grapes add vibrancy, while a strong malt-biscuit thread weaves together the anise and citrus base.

  • Palate

    Silky and full-bodied. An initial pop of estery rum brightness gives way to a wave of citrus - sweet lemon, lime, and a hint of ginger. Tropical and rich, the flavours lean into confectionery (but no cloying sweetness) - green fizzer, lime musk, almost quince paste. Kiwi fruit and a deep, juicy sweetness carry through, Kiwi fruit and a deep, juicy sweetness carry through, leaving a bright, lingering vibrancy.

  • Finish

    Soft tannins grip gently, second-fill French Oak's playful nature shining. Sherbet-like acidity, strawberry and cream come next - jammy yet lactic. The mouthfeel remains effortlessly silky, with lingering notes of apple juice, kiwi fruit, fresh fig, coriander seed, and sage.
