Far from the whisky establishment, Sullivans Cove was free to explore and perfect its process, blending tradition with innovation. Philosophy:

Distilled in Hobart, Tasmania, Sullivans Cove single malt is made using traditional methods and 100% Tasmanian ingredients. Inspired by nature and patiently aged, Sullivans Cove distillers seek the sublime. Each cask is nurtured to its natural peak, with thousands of tiny decisions helping each batch reach its full potential. No two batches are the same, making every release an opportunity for exploration.

Tasmania’s pure, clean water and fertile barley-growing land make it an ideal location for producing world-class whisky. This combination of high-quality water and grain is the foundation of all Sullivans Cove whiskies.

All Sullivans Cove whiskies are made from 100% Tasmanian malted barley. The wash is brewed locally by experienced brewers and then double-distilled in a unique Tasmanian-built pot still, affectionately known as "Myrtle." The first distillation, known as the "wash run," produces low wines of around 20% ABV, which are then distilled again during the "spirit run" to produce a spirit of around 70% ABV. This spirit is diluted to 63.5% ABV before being placed in casks for ageing.

Most whiskies are aged in either 200L American oak ex-bourbon barrels or 300L French oak ex-tawny barrels, maturing for many years in Tasmania’s unique climate—typically between nine and eighteen years.

TASTING NOTES
Nose
A rich tapestry of roasted coconut and cola open, while the playful sweetness of white jelly beans meets a musky creaming soda note. Vanilla weaves through raspberries, marshmallow, and cookie dough, resting above brown sugar and chocolate mousse. Hints of cinnamon and wood oil offer a subtle lift - broad and enticing.

Palate
Silky and full-bodied, the palate bursts with coconut, mango, and the sweetness of leatherwood honey. White pepper and balsa wood add a delicate spice, while buttery shortbread and cinnamon enhance the warmth. Raisins, orange, and dates combine with butterscotch sauce for a decadent, sweet balance.

Finish
The finish is long and gentle, with an earthy-sweet note of cola and cherries in syrup leading the way. A strong nutty character of walnuts and pine nuts rolls through - joined by bay leaf for a savoury, herbal touch - as final notes of quince add a bright, fruity lift that lingers.
