Produced in Oaxaca, Mexico, this añejo is made from 100% Espadín agave, harvested at full maturity to capture depth, sweetness and structure. The agave piñas are slow-roasted in earthen pits, developing the signature smoky character that forms the backbone of the spirit. Natural fermentation and careful small-batch distillation preserve the integrity of the agave while allowing nuanced flavours to emerge.

The spirit is then aged for over a year in a combination of American and French oak barrels, where it gains richness, roundness and aromatic complexity. This extended maturation softens the smokiness and introduces layered notes of dark chocolate, vanilla, dried fruit and warming spice.
